“Valle dei Trulli”

Sausage (classic curl shaped or straight version) is made by using the central cuts of the shoulder and an optimal portion of Italian pork belly (previously  the nervous parts and excess fat is removed); they are chopped coarsely and mixed gently with the mixture of the other ingredients.
After ageing, the sausage is ready for your “frugal meal” and much more.
